Instructions:

For Japanese-style dashi, bring the water to a boil and add the bonito flakes along with the kombu seaweed. Allow to steep for at least 30 minutes, preferably 1 hour. But do not continue to boil! Then strain and keep ready for further use.

Let the seaweed steep in the water for about 4 hours, until the water turns green. Then bring the water to a boil. Just before it really boils, remove the algae leaf and add the bonito flakes.

Boil once briefly, then remove from heat and wait for the flakes to sink to the bottom. Strain the liquid, squeezing the flakes well to retain as much flavor as possible from the dashi.
