A great cake recipe for any occasion:

1. 2 days before: lightly grease the bottom of a cake springform pan (26 cm ø). Coarsely chop cooking chocolate and melt in a hot water bath, then cool a little. Separate the eggs. Put 3 egg yolks in a baking bowl to cool with the lid closed.

2. Beat 6 egg yolks and 2 tbsp sugar with the whisk of a hand mixer until creamy. Fold in melted cooking chocolate. Whip all egg whites until stiff, sifting in 2 tbsp sugar. Fold the beaten egg whites into the egg yolk mixture.

3. spread the mixture into the mold. Bake in a heated oven (electric oven: 175 °C / convection oven: 150 °C / gas: level 2) for 40-45 minutes. Take out, cool a little. Remove from the mold. Cool the base, preferably for one night. 4.

The next day, beat the butter and powdered sugar with the whisk of a hand mixer until creamy. Gradually fold in the cooled 3 egg yolks. Fold in the flavoring or rum as well.

5. spread the cream on the base and cover evenly with biscuits. Drizzle orange juice over cookies using a tablespoon. Refrigerate the cake repeatedly for one night with the lid closed.

On the 3rd day, whip the cream until stiff and add the vanillin sugar. Spread on top of sponge cake. Decorate cake.

Extra tip: You can also cook the cake in one day!
