For the Kaiserschmarren, beat the eggs with the sugar in a bowl for a few minutes until the volume doubles. Then stir in the milk and fold in the flour. Finish with a pinch of salt.

In a large pan, melt 4 tablespoons of butter and pour in the batter and let it set. When about half of the batter has set, you can start dividing the batter into pieces with a spatula and flipping.

Fry the rest of the dough until golden brown and cooked through. Serve with applesauce and cinnamon.
