For the Kaiserschmarren, first put the raisins in a small bowl. Heat the rum and pour over them. Soak for at least 20 minutes.

Lightly toast the almond flakes in a dry frying pan without adding any fat.

Preheat the oven to 80 °C and heat a plate with it.

Mix the cream, egg yolks, milk, sugar, vanilla sugar and whipped cream well. Sift in the flour and mix everything together until smooth.

Whip the egg whites with the baking powder until stiff. Carefully fold into the dough.

Heat half of the butter in a large coated frying pan. Pour in half of the egg mixture and beat until stiff. While still in the skillet, pry apart with two forks.

Keep warm in the oven until the second unit is baked in the same way. Dust the Kaiserschmarren with powdered sugar and sprinkle with flaked almonds.
