For the Kaiserschmarren, first mix the milk and flour. To do this, rub the handle of a wooden spoon between your hands very quickly. Then add eggs, a little salt and sugar and whisk repeatedly until the dough bubbles (it should not be too thick and not too thin).

Heat the fat in a large, iron frying pan with a lid and pour in the batter in batches (not too much at once!). Fry briefly until it is nice and golden brown on the bottom, then turn to the other side, put the lid on and steam for a few minutes. The Kaiserschmarren will rise to at least double its height.

Then tear into pieces and put the first, then the second unit of Kaiserschmarrens in the preheated oven. Finally, dust with powdered sugar and serve the Kaiserschmarren.
