For the Kaiserschmarren, first whip the egg whites with sugar and salt until firm. Mix the yolks, cream, vanilla sugar and lemon zest and fold into the beaten egg whites. Melt butter in a large pan. Pour the batter into the pan, let it brown over medium heat and bake in the preheated oven at 200 degrees.

When the Kaiserschmarren is golden brown, tear it into pieces with two forks, sprinkle with granulated sugar and put it back in the oven for a short time. Then the Kaiserschmarren can be served.
