Eggs and 2-3 tbsp sugar (the rest you will need later to avoid the formation of a skin) in a bowl form and beat with a whisk or the beaters of a hand mixer really nice and creamy. If the amount has some resemblance to vanilla cream, it is right in detail. Now please stop whisking.

Finely grate the chocolate once at the beginning. Take about 100 ml of the milk, stir well with the cornstarch (maizena) and then set aside for now. Put the remaining milk in a saucepan with the chocolate and bring to the boil, stirring over medium heat (gas: on low).

After boiling, add the maizena (cornstarch)-milk mix (stir briefly repeatedly beforehand) to the chocolate milk form while stirring. Gently simmer everything until the mixture is creamy. Turn off kitchen stove, fold in the egg cream – but do not bring to a boil. Remove the saucepan from the stove. Pour pudding into ramekins or a bowl. Sprinkle the remaining sugar over the pudding. Stir repeatedly before serving.
