Gingerbread dough:

Heat the honey with the sugar until it dissolves.

Cool to 40 degrees, mix the honey with the flour, adding the egg yolk and spices. Depending on the processing, the leavening agent (diluted in a little water) is now worked into the dough or possibly the dough is cooled and stored. In the process, dough acids are formed which give the gingerbread cookies an unusually aromatic note.

For processing, the dough is rolled out to 5 mm and cut out according to templates. After baking (on parchment paper), the individual parts are assembled and decorated with egg-white icing.

In the process, take colorful sprinkles, candies, smartis, etc. And decorate the roof colorfully. Hansel and Gretel and the witch, you can form from the dough and bake along, or draw on paper and cut out.

The witch should stand in the doorway and the kids at the window, each with a small piece of gingerbread in their hands. It is nice if there is iced snow on the roof, the fence and the trees, either from powdered sugar, or coconut shavings, or both.

The figures are also available for purchase: Cat, Gretel, Hansel, dog, deer, witch, fox, etc. They are usually available from the confectioner, in supermarkets there is only a standard version of Hansel and Gretel with the witch. The trees can be made from gingerbread, respectively from paper, a fence also looks quite nice.
