Instructions:

A delicious mushroom dish for any occasion!

(Portion molds of about 10 cm ø) Morels soak in cold water for about 20 min.

Peel the kohlrabi, cut into slices and pre-cook in the soup for about ten minutes. Drain and drain.

Pour mushroom soaking water through a coffee filter paper. Rinse morels well under running water. Cut large mushrooms in half lengthwise. Finely chop shallots and sauté in butter with drained morels until soft. Douse with about three tablespoons of the soaking water and simmer for ten minutes. Cool slightly, then mix with the kohlrabi.

For the glaze, mix all the ingredients well. Cut out rounds from the puff pastry, spread out the pastry in ramekins. Spread the kohlrabi and mushroom mixture evenly. Pour the glaze over it. Bake in a 220 °C oven for about twenty-five minutes.
