Instructions:

Mix the ingredients for the herb crust until a solid amount is formed. Form into a roll and refrigerate. For the potato fritters, bring butter, water, salt and nutmeg to a boil. Add flour and hemp flour and stir until a dumpling forms, cool. Stir in eggs and egg yolks. Press potatoes through a potato ricer. Mix with the hemp dough. Form small dumplings from the dough. Bake in hot fat until done. Season lamb salmon with salt and pepper, fry on both sides in hot fat. Cut the cold herb crust into four slices. Cover lamb pieces with it. Bake under broiler until crust is lightly browned. For the sauce, bring garlic cloves and stock to a boil. Add roasted hemp seeds to the sauce. Arrange lamb and potato fritters on four plates and bring to table with hot sauce.
