Pour the flour on the surface and press a bulge in the center. Butter in lard, pieces, sugar, salt and lemon zest in the bulge form. Add an egg and knead all the ingredients together from the center to form a smooth dough. Form the dough into a ball and put it to cool for an hour. Then knead again briefly on the floured surface and shape into 5 pieces. Form each piece into a 24 cm roll. Leave the rolls to cool for 30 minutes. Mix the remaining sugar with cinnamon, mix the egg with a fork. Brush the rolls all over with the egg and roll in the cinnamon sugar. Line baking sheets with parchment paper. Cut each roll into 30 slices and bake in a heated oven at 175 °C on the middle shelf for 12-15 minutes. The cookies should only turn light brown. Cool on the baking sheet, then keep in tins.
