Instructions:

For the layered cheesecake, first prepare the strawberry sauce. To do this, mix cornstarch and sugar. Bring to a boil together with water and strawberries. Simmer until the strawberries are soft and the mixture has thickened. Puree if necessary. Then strain through a fine sieve. Allow to cool.

For the cream cheese mixture, mix all ingredients.

Pour into the jars first the crumbled cookies (reserve a few for garnish). Then spread most of the cream cheese mixture on top, followed by the strawberry sauce and finally the rest of the cream cheese mixture. Refrigerate for a few hours until ready to use.

Serve the layered cheesecake garnished with strawberries and crumbled cookies.
