Instructions:

Beat the eggs with the sugar until the mixture is light and fluffy. Gradually add the remaining ingredients, the baking powder and the starch together with the flour at the end.

Then quickly pour the batter into the muffin cups (makes about 6 muffins) and place in the already preheated oven. Bake at 180 °C convection oven for about 20-25 minutes until a golden crust is formed.

Let the muffins cool and then brush with the glaze.

For the glaze, simply mix the powdered sugar with very little lemon juice until a viscous mixture is formed. Decorate with a lemon zest if desired.

After 15 minutes in the refrigerator, the glaze is hardened.
