For the lemon pancakes, first prepare the dough.

To do this, whisk the eggs with the milk. Add salt, flour and lemon zest and mix to a smooth, thin batter.

Heat butter in a frying pan and pour the batter as thin as possible, bake and turn once carefully. Repeat this process until the dough is used up.

For the filling, mix creme fraiche with a little lemon juice, vanilla sugar and possibly rum. Spread the filling on the pancakes, roll them up and sprinkle with sugar.

Serve the lemon pancakes.
