For the lemon sugar, wash the organic lemons well, dry them and peel the peel very thinly with a peeler. There should be no white parts on the pieces of peel.

Lay the peels on and let them dry until you can break them. This is best done in a dehydrator or in the oven. After 12 hours at 40 °C, the peels will be crisp.

Weigh the dried peels. I calculate 3 heaping tablespoons of sugar per 10 g of dried peel. Blend peels and appropriate amount of sugar in a stand mixer until everything is chopped small. Pour the lemon sugar into a screw-top jar and store in a dark place, tightly closed.
