For the lentil soup with avocado, first wash the lentils and rinse until the water remains clear.

Finely chop the onions and garlic and sauté in olive oil until translucent. Pour in the soup and Soy Cuisine and add the lentils, bay leaf, curry, tomato paste, ginger and thyme. Simmer for 10-15 minutes until the lentils are soft.

Meanwhile, wash the orange, grate the zest and squeeze the juice. Cut the avocado in half, peel, cut into strips and drizzle a few drops of orange juice over the top. Mix the remaining orange juice and orange zest to the finished soup and season to taste. Serve the lentil soup with avocado.
