Lentil Stew Sweet and Sour

Instructions:

Soak the lentils, well covered with water, for a few hours.

Cut bacon into cubes and render in a medium saucepan. Peel and dice the onion and sauté in fat until translucent.

Add the lentils along with the soaking water. Stir well and simmer gently.

In the meantime, peel and dice potatoes. Clean and chop the greens and add to the lentils with the potatoes and spices.

Cook the lentils at low temperature for 50 to 60 minutes. Season to taste with vinegar.

Just before serving, melt the butter, caramelize the sugar in it and add to the soup. Finish with whipped cream.
