For the lentils with spelt napkin dumplings, soak the lentils in four times the amount of water and leave for 1-2 days until they begin to sprout. Change the water at least 1 time.

Strain lentils and cover with water. Boil for 20-30 minutes until lentils are soft.

Skim off any foam that forms during cooking. 5 min before the end of cooking time, add finely chopped carrots, 2 to 3 sprigs of thyme and 1 teaspoon of vegetable soup powder. Season the soft cooked lentils with salt, pepper and apple cider vinegar. Puree half of the lentils, mix again with the whole lentils, allow to infuse briefly and celebrate with balsamic vinegar.

For the spelt napkin dumplings, mix rice milich, nutmeg seasoning, chopped parsley, oil and salt and pour over the spelt cubes. Mix well and let stand for min. 30 min. Mix occasionally and if the quantity is too dry, add some more water. When the quantity is properly moistened, knead it lightly, form it into a roll and wrap it tightly in a tea towel. Tie the towel and cook on the stove for about 30 minutes.

Now cut the smoked tofu into cubes and fry in coconut oil until crispy brown, then drain on kitchen paper and serve on the lentils with spelt napkin dumplings.
