Squeeze one lime. Peel the second one and cut it into small slices. Spread slices evenly and drizzle with a tiny bit of lime juice.

Mix eggs. Mix with salt, mustard, sugar, pepper, mineral water and flour. Turn cutlets from both sides in it to the other side. Fry in hot butter and oil until golden brown. Remove and keep warm.

Briefly sauté the lime slices in the roast stock. Pour on a little water and simmer gently. Add the chopped parsley. Season with salt and pepper.

Serve the cutlets with the sauce.

Serve with small new potatoes or baguette.
