Wash the limes hot, rub dry. Peel the lime peel very thinly. Remove the peel from half of the ginger and cut into coarse pieces. Fill the lime peel with the ginger pieces and the grain in a carafe, infuse at least 24, better two days. Boil the water with the rock candy for 10 minutes. Cut the remaining ginger into coarse pieces. Add honey, ginger and the juice of half the limes to the sugar syrup form and simmer for 1/2 minute. Remove from heat and cool completely. Pour the corn-lime mixture and honey-sugar syrup through a coffee filter or very fine hair strainer. Combine both in a carafe and keep sealed in a cool place. Serve lime-ginger liqueur neat with ice.
