Pour vegetable soup into a high saucepan and bring to a boil on the stove. Rinse the greens and cut them into small pieces and add to the clear soup with spices. Simmer the clear soup on low heat for about 20 min. Rinse the lime, grate the peel and squeeze out the juice.

In the meantime, remove fat and tendons from the leg of lamb. Tie into shape with spaghetti if necessary. Add lime juice and zest to clear soup and place leg of lamb in hot clear soup. Simmer the lamb quietly for about 2 hours. Turn the meat to the other side from time to time. Remove the meat from the clear soup, wrap in aluminum foil and cool.

Rinse the kitchen herbs, shake them dry and pluck the leaves. Peel the garlic clove and crush it with the herbs, the oil and about

50 ml clear soup. Peel and chop the eggs, add to the herb puree form and season with salt and freshly ground pepper.

Cut the meat, spread it out on a platter, garnish with pesto and egg slices.

Tip: Bring the delicious clear soup to the table hot in cups for brunch.
