For the liver skewers, chop liver, salt, pepper and top with roughly plucked fresh sage leaves and bacon.

Thread the liver pieces one by one on wooden skewers and fry them at low temperature in butter on the bacon side, then let them stand for a few minutes.

Finally, fry for a few seconds on the other side and serve the liver skewers immediately.
