(Puit dÂamour)

Something very unusual, a little sweet is the puit d’amour, the fountain of love. A pastry that looks like a fountain, filled with a compote of blood oranges that looks like the blood of the heart – a symbol of love flat….

Start with the shortcrust pastry, because it needs to rest for a while after kneading. To do this, start by mixing salt, flour, sugar and cold butter cut into small cubes with the dough hook of the mixer until crumbly crumbs are formed, then add the yolks and while mixing a smooth dough is formed. Wrap the dough in plastic wrap and let it rest in the refrigerator for an hour.

For the choux pastry, boil the water with the salt and butter, then pour in all the flour at once. Now a lump forms, and you stir it at low temperature meanwhile until it slightly sets at the bottom of the pot, i.e. burns off – hence the name choux pastry. Cool a bit and then incorporate the eggs one by one with a wooden spoon, fill into a piping bag and cool.

To build the love fountains, roll out the shortcrust pastry to a thickness of five millimeters on a floured surface and cut out circles of pastry about ten centimeters in diameter. Pipe a relatively thin layer of choux pastry onto the edges of the dough circles and the fountains are ready. In the oven heated to 180 °C they need 20 min baking time.
