Macaroni in Ham Coat with Arugula Salad

Pasta dishes are always a good idea!

Cook the macaroni in enough salted water until very al dente. Drain in a colander, rinse with cold water and drain.

Grease two ovenproof soup bowls or possibly high ramekins with butter and spread each with 1 slice of ham.

For this it is best to cut two wide strips of ham and lay out the edge, then add another piece for the bottom. Cut the macaroni into pieces long enough to fill the cups standing vertically.

Divide macaroni evenly in the cups. Cut any overhanging pieces into small pieces. Preheat the oven to 200 °C. Rinse the thyme, shake dry and pluck the leaves. Mix eggs, egg yolks, milk and crème fraîche. Season with sea salt and pepper and stir in the thyme leaves. Divide the mixture evenly into the two cups and sprinkle with Parmesan cheese. Bake the macaroni in the heated oven for about 18 min.

Clean the arugula, rinse it and shake it dry. Marinate with vinegar and 1 tbsp olive oil. Mix the olive paste with the remaining olive oil until smooth.

Cool the macaroni au gratin for 1 to 2 min, then loosen with a kitchen knife on the inner rim of the cup and turn out. Place on plates with the gratin side up. Spread the arugula salad evenly around the macaroni and drizzle the olive paste over the arugula salad.
