Seed the chilies. Dry roast all the spices in a frying pan over moderate heat until darkened, shaking the pan or stirring frequently to avoid burning. Cool and grind. Roast curry leaves briefly in frying pan, crush and add to mixture form with ginger and turmeric, mix thoroughly.

Tip: Always use aromatic spices to refine your dishes!
