For the Matjes Hausfrauenart, rinse the matjes under cold running water. Divide into pieces. If it is still very salty, put the matjes in a shallow dish, pour mineral water over it, let it steep for half an hour and then dry it.

For the sauce, peel the onions, cut them into rings, quarter the apple. Cut apple quarters and gherkins into slices.

Mix whipped cream, crème fraîche and curd cheese. Season with sugar, pepper and salt. Add onion rings, apple and cucumber slices and serve with matje. Garnish with dill.
