For the Melanzani Mini Pizzas, blanch the tomatoes, remove the skins, seeds and strunks, dice and place in a bowl.
Mix with cheese, garlic, oregano, basil and olive oil. Season with salt and pepper and cover.
Wash the melanzani, pat dry, cut off the stem, cut into 1 cm thick slices and salt. Brush a grill pan with a little vegetable oil and grill the slices in it on both sides.
Place the grilled melanzani slices on a baking sheet lined with baking paper. Spread the tomato and cheese mixture on top and cook in a preheated oven at 180 degrees, for about 10 minutes, until the cheese is nice and golden and melted.
