Wash the melanzani and cut into 1 cm thick slices. Fry in oil in a frying pan until lightly brown on both sides, keep warm.

In a bowl, bring to a boil a little oil paradeis pulp, garlic, tomatoes, soup seasoning, parsley and bay leaf spice. Season to taste with salt and freshly ground pepper and simmer gently for 15 minutes.

Add Parmesan cheese and bread, fold in well, remove from heat.

Grease a shallow gratin dish of 2 l capacity, put a layer of melanzani on the bottom, cover with half of the tomato sauce and half of the mozzarella cheese, then another layer of sauce, mozzarella, melanzani.

Bake in the oven at 180 °C for 20 minutes, then serve immediately.
