Instructions:

Dip the peaches briefly in boiling water, remove the skin, halve and cut into cubes.

Cut the melon in half and scrape out the seeds. Scoop out the flesh with a baller.

Pour the white wine over the peach cubes and melon balls and leave to cool for at least an hour. Immediately before serving, top up with the champagne.
