Crumble the bread into a large enough bowl, pour the milk over it and leave to boil for half an hour. Melt the butter in a small saucepan.
Squeeze the soaked bread well and guide it into the hot butter. Heat, stirring, until the mixture is dry but still soft. Then pour the bread crumbs into a larger baking bowl, add the eggs, 100g of the nutmeg, salt, parmesan and pepper. Stir everything well and let it stand for 1 hour.
Heat the beef broth and leisurely stir in the bread and cheese mixture, let stand for 5 minutes. Bring to the table very hot and sprinkle the remaining Parmesan only at the table.
