For the Mini Magic Cake Crumble, first preheat the oven to 160 °C. Peel the apples, remove the core and cut into small cubes. Melt the 65 g butter and let it cool down.

For the crumble, in the bowl of a mixer, mix the 60 g butter, 60 g sugar and 60 g flour until a crumbly consistency forms. Then refrigerate.

For the dough, separate the egg whites and yolks, beat the yolks with the 70 g sugar until foamy. Add the melted butter, stir in the 53 g flour twice and then the milk. Beat the egg whites and fold them into the mixture. The batter should be runny and the egg whites should float on top. Divide the apple cubes among the molds. Scoop the batter into the molds with a ladle. Make sure there is both liquid and beaten egg whites in each mold. Then cover with the crumbles.

Bake the mini magic cake crumble for 28 minutes. Let cool at room temperature.
