Instructions:

Soak and chop the mushrooms, remove hard stalks.

Cut the carrot into small slices.

Separately, cut the paksoi leaves and stems into small pieces.

Cut the bamboo shoots (substitute walnuts, zucchini or sugar snap peas) or zucchini into narrow slices (like the carrots) Heat sugar, sesame oil, salt and oil in a heated wok, sauté carrot and paksoi stems in it and stir-fry for about 2-3 minutes.

Add remaining vegetables and heat for a few minutes until cooked but still al dente. Season with salt and sugar.

Tip: Zucchini is a type of squash and therefore low in calories, rich in vitamins and easy to digest – just the thing for a light meal!
