(*) Mushrooms steamed in spices Remove the skin from the mushrooms and rinse them. If they are large, halve or quarter them.

Make about 10 min in bubbling water, then drain them exactly.

In the meantime, finely chop the onion, then sauté in a dash of olive oil until translucent. Add the mushrooms and sauté gently over a high flame for a few moments.

Add salt, spices, turn down the flame and cook for about 15 minutes, covered.

Monitor the cooking, stirring from time to time and bring to the table when they are nice and golden brown.

Tip: Cook only with high quality spices – they are the be-all and end-all in a good dish!
