For naan, first sift flour, pour into a large bowl and make a dent in the center with your fist. Crumble in yeast and sprinkle with 2 teaspoons of sugar. Pour 2 1/2 tablespoons of warm milk on top and stir.

Then sprinkle with a little flour. Place in a warm place, cover and let rise for 1/2 hour. When the yeast starts to bubble and the flour starts to crack, mix in the remaining ingredients and add enough warm milk to make a soft dough. Knead for 10 minutes, then put back in a warm place (with yeast dough it is important that it does not get a draft) and let rise for about 2 to 3 hours. The dough volume doubles during this time.

Knead again for 2 to 3 minutes. Roll out the dough to a thickness of about 1 cm and divide into 6 naans. Let rise again for 15 minutes. Grease a baking pan and heat the broiler. Put naan on it and let it brown on both sides for 2 minutes under the broiler.
