For the nectarine-gooseberry jelly, halve the lime and squeeze. Wash and halve the gooseberries. Wash and pit the nectarines, cut into small cubes.

Mix the nectarines and gooseberries with 2 tablespoons of lime juice and 3 tablespoons of syrup in a slightly larger bowl and allow to steep. Soak the gelatin in cold water for at least 5 minutes.

In a saucepan, heat the remaining lime juice and 3 tablespoons syrup and dissolve the squeezed gelatin while stirring. Add the prosecco, stir briefly and mix with the fruit.

Chill until the liquid begins to gel (can take 30 minutes and even longer), then pour into glasses and chill again for at least 4 hours.

Mix yogurt with vanilla sugar and spread on the jelly.
