Take ingredients out of the refrigerator early and prepare at a good room temperature. The most favorable dough heat is about 24 °C .

In the kneading bowl, melt fresh yeast in milk, sugar with spices. Add the eggs and the baking mix and mix for 1 min. at low speed with the dough hooks. Then at high speed for 3 min. Continue kneading until a smooth, supple dough that is no longer very sticky. Form a dough ball and leave it covered at 40 °C. Knead repeatedly by hand, divide into six equal parts and roll them out into finger-thick strands 1 m long. Flour the work surface and hands
