For the nougat croissants, in a bowl or on a work surface, knead butter with soft nougat (block softened briefly in the microwave or over a water bath, do not heat).

Add remaining ingredients and work quickly with hands to form dough. Cover with plastic wrap and let rest in refrigerator for about 2 hours. Shape into croissants.

Place on prepared baking sheet and bake in preheated oven at 165 to 175 °C for 8 to 10 minutes until light on sight. Melt couverture and coconut oil together and dip the tops of the croissants.
