Nut and Poppy Seed Bites

Instructions:

Finely crumble the yeast and mix with the lukewarm milk and all other ingredients to form a dough. Let rest for about 20 minutes. Divide dough into more or less large pieces, roll out well and cut squares. Place a little nut or poppy seed filling in the center of each. Fold dough over each other, shape into croissants and place on a baking sheet lined with parchment paper. Brush with yolk and let dry in warm place until yolk has dried up. Brush again with yolk and bake in a preheated oven at 175 °C for about 20 minutes. For the nut filling, boil the milk, cut the marzipan into cubes and add together with the walnuts and aromatics. Add the breadcrumbs and cook to a firm consistency. Allow to cool. For the poppy seed filling, also heat milk, add poppy seeds and cook with the remaining ingredients to a compact mass. Allow to cool.
