For the omelet with chanterelles, clean the green onions and cut them into strips.

Peel the onion and cut into fine cubes. Sauté the spring onions and the onions in the butter until translucent. Add the ham cut into small strips or cubes to the onions.

Clean the chanterelles and chop each one as needed. Sprinkle with a little juice of a lemon and add to the ham. Season with salt, pepper and nutmeg and continue frying.

At the end of the cooking time, season the whole thing again heartily, fold in the parsley and keep it ready.

For the omelets, whisk the eggs with the milk.

Bake the omelets in batches. For this, fry the mixture of 2 eggs in butter for a short time and then let it set for 1-2 minutes with the lid closed.

Cover with the chanterelle mixture, fold and bring to the table sprinkled with chives.
