For the onion bread with goat cheese, peel the onions, quarter them and cut them into fine strips. Melt the butter with the sugar in a pan. Stir in the onions with the chili flakes and fry over medium-low heat for about 5 minutes. Pour in the red wine or grape juice and cook everything for about 13 more minutes until the liquid has reduced to a creamy consistency, then add salt.

Preheat the oven to 250 degrees (also turn it on now: fan oven 230 degrees). Line the baking tray with baking paper.

Place the bread slices side by side on the tray and spoon the onions on top. Cut the cheese into slices just under 1 cm thick and place them on top. Place the tray in the oven (center) and bake the onion bread with goat cheese for about 5 minutes until the cheese melts and is slightly brown.
