Onion Vegetable Chutney — Kachoomar

Instructions:

Kachoomar is a classic chutney from North India. Onions, tomatoes and green peppers are mixed with juice of one lemon, coriander leaves and green chilies. A little roasted, ground cumin sprinkled on top gives it an interesting aroma.

Peel and halve the onions. Cut into thin slices. Pour iced water in a baking dish. Add vinegar and leave to cool.

Rinse green peppers, remove seeds and septum. Cut into strips.

Coarsely chop the coriander leaves, remove the seeds from the chili peppers and cut into strips. Add both to the tomatoes and the peppers. 5.

Drain the onion and add it to the other vegetables. Squeeze the lemon over it and season with salt to taste. Mix briefly and bring to the table on the spot. If the kachoomar stands longer, it loses its crunchy bite.
