Pit the dates. Cut dates and plums into very small pieces.

Coarsely chop pistachios. Finely grate orange peel. Mix baking soda, baking powder, flour, 1 pinch of salt and sugar. Add butter and mix briefly with the dough hook of the mixer. Mix eggs with whipped cream, set aside 2 tbsp of the egg yolks. Mix remaining egg yolks with the plums, dates, flour mixture, 2h of the pistachios and orange zest to make a relatively soft dough.

Dust the dough with flour and roll out between 2 layers of parchment paper to a thickness of 1-1, 5 cm. Cut the dough into 25 lozenges of 4×3 cm with a rolling pin or kitchen knife. With the help of a pallet, place them on a baking tray lined with parchment paper. Brush with the remaining egg yolk and sprinkle with the remaining pistachios.
