Instructions:

Meat preparation: Cook the belly meat about 1 1/2 h on the stove. (In this country most people use a pressure cooker, then it takes only 45 min). Cut the tomatoes and onion into cubes. Crush the garlic cloves.

After the meat is fork-tender, the main work begins: cut the cooked meat into 6 pieces. After that you have to carve the meat by hand. This is done by pulling the fibers out of the piece of meat with the hand until everything is cut together.

Then ditto the remaining pieces of meat ‘tearing’ in the same way. In a saucepan, heat the cooking oil and add the tomatoes, onions and garlic. Simmer the whole thing on low heat for 5 minutes, stirring until the tomato is dissolved. Then add the salt, meat fibers, cumin and tomato ketchup. Boil everything together for another 1/2 hour on low heat, stirring from time to time.

Long grain rice: 500 grams of long grain rice are bubbled, with a little salt.
