Instructions:

For the pancakes, stir together milk, flour, egg yolks and salt until smooth. Beat the firm beaten egg whites with granulated sugar and fold into the mixture.

Heat butter in a pan, pour the batter into the pan with a ladle, brown, turn to the other side and finish baking in the oven.

Fill the pancake as desired with jam, arrange and sprinkle with sugar.
