Instructions:

For the pancakes with baked apple jam and hazelnuts, first core the apples for the baked apple jam, cut them in half widthwise, sprinkle with sugar and cinnamon and bake in the oven at 170 °C for about 40 minutes.

Meanwhile, mix the eggs with the milk and mineral water, add the sifted flour and bake thin pancakes in a little butter.

Remove the baked apples from the oven and finely mash them with the lemon juice. Pour into a saucepan and bring to the boil once, brush the pancakes with it and sprinkle with the hazelnuts, roll up with a little powdered sugar and garnish with a few hazelnuts. Serve the pancakes with baked apple jam and hazelnuts while still hot.
