For the Parmesan crackers with oregano, grate the Parmesan fresh and mix well in a bowl with the breadcrumbs and oregano.
Heat a non-stick pan until hot and bake 3 tablespoons of the Parmesan mixture (without fat!). Carefully flip and continue baking until the cracker is nice and golden brown.
Let cool on a wire rack and bake the remaining parmesan mixture out the same way.
Break the Parmesan crackers into pieces with oregano and season to taste.
