Instructions:

For the pasta salad with Debreziner, cook the pasta in vegetable soup until al dente. Add thyme sprigs to the soup. Drain the cooked pasta, reserving some of the cooking water and set aside.

Rinse the pasta with cold water and mix in a little olive oil to keep it from sticking together.

Whisk some of the cooking water with vinegar, sugar, pepper, mustard and olive oil.

Marinate the pasta with the sauce while it is still warm.

Wash the frisée lettuce, spin dry and pluck into bite-sized pieces. Wash the spring onions and cut them into fine rings. Wash tomatoes and cut into bite-sized pieces. Peel the debreziner and cut into thin slices.

Wash the basil and pluck the leaves.

Now stir all the ingredients together, season with salt and pepper if necessary and serve the pasta salad with debreziner.
