Cut radicchio in half and score each half like a fan. The leaves should stick together at the stem. Fillet oranges, reserving juice. Rinse thyme, dry and pluck leaves from stems. Make linguine according to package directions.

Meanwhile, lightly caramelize sugar in a frying pan, add olive oil and sauté radicchio briefly. Add vegetable soup and collected orange juice and bring to a boil once.

Add olives, orange fillets, thyme, capers and butter, bring to a boil and stir. Season generously with salt and freshly ground pepper.

Dressing Divide everything evenly among four plates. Serve with Parmesan cheese, if desired.
