For the pasta with chanterelles, clean and prepare the chanterelles. Cook the tagliatelle in salted water until al dente. Sauté the shallot in butter with 1/2 tsp sugar.

Add the chanterelle and fry at high temperature.

Deglaze with stock, sherry and double cream and cook at high temperature for about 5 minutes. Season with salt and pepper and add the parsley.

Serve ribbon noodles with chanterelle.
