Instructions:

For the Peanut Caramel Corners, first prepare the dough. To do this, sift Fini’s Feinstes Wheat Flour Universal and cocoa powder. Mix with powdered sugar, finely chopped butter, egg yolks and salt to form a smooth dough. Wrap in plastic wrap and chill for about 3 hours. Roll out the dough on a lightly floured work surface to a thickness of approx. 3 mm and place on a greased and floured baking tray. Bake in the preheated oven on the middle rack for about 14 minutes. For the topping, slowly melt some granulated sugar in a pan. Gradually add the remaining granulated sugar. Once the sugar has melted, add the hot cream and butter. Let the mixture cook slowly for about 15-20 minutes. Mix in the peanuts and almonds and simmer again for about 2 minutes. Allow to cool briefly. Then spread the caramel mixture evenly over the finished shortbread.

Chill the peanut caramel wedges overnight (not in the refrigerator) and cut into small triangles.
